Pad Thai [or Phat Thai] is a traditional dish from Thailand, which was even nominated the national dish during the second world war!
It’s main components are rice noodles, fish sauce, a source of protein like seafood or tofu, eggs and typical asian vegetables such as chili and mungbeans! Traditionally it’s a dry and light dish, but us westerners tend to make more oily/spicy variations of it!
The BEST Pad Thai I ever had was on the Maldives late 2017….I will never forget that ? But I’ve also found some satisfying options in Vienna. One day I’ll have to have it in Thailand to get the full authentic experience!
Now here’s the deal: I challenged myself not only to make my own version of it, but to make it fully plantbased! And you know what? My first attempt actually worked out! It’s definitely not 100% authentic- but it’s quite easy to replicate with ingredients easier to find over here!
SO! Here goes! [english / deutsch] – Vegan Pad Thai Rezept
Ingredients:
- 100g Jackfruit / 100g Jackfrucht
- 50-75g Coconut Blossom Sugar / 50-75g Kokosblütenzucker
- 2 Tbsp olive oil / 2 EL Olivenöl
- 1 Lime / 1 Limette
- 1/2 red pepper / 1/2 rote Paprika
- 1 carrot / 1 Karotte
- 50g snow Peas / 50g Zuckerschoten
- 2 shallots / 2 Schalotten
- 1 Fresh Chili / 1 frische Chili
- Fresh chive / frischer Schnittlauch, gehackt
- 125g smoked Tofu/ 125g Räuchertofu
- 40g Peanuts / 40g Erdnüsse
- 200g Ricenoodles or similar pasta / 200g Reisnudeln oder ähnliche Pasta
- 6 Tbsp Soysauce / 6 EL Sojasauce
Instructions:
- Cook pasta as usual (I used lentil/Rice spaghetti) or soak dried rice noodles in water for an hour. Set aside. / Pasta wie immer kochen ODER getrocknete Reisnudeln für 1 Stunde in Wasser einweichen – beseite stellen für später!
- Cut lime into quarters, chop shallots, red pepper, chili, carrot and Peanuts. / Limette vierteln, Karotte, Schalotten, Paprika, Chili und Erdnüsse hacken.
- Mash tofu with a fork. / Tofu mit einer Gabel fein zerdrücken.
- Combine soysauce, Chili, olive oil and sugar; mix it really well- this is the Sauce! / vermenge Sojasauce, Chili, Zucker und Olivenöl- vermische es ordentlich – das hier ist die Pad Thai Sauce!
- Heat coconut oil in a large pan or wok. First add shalotts, then add peppers, carrots and jackfruit, fry for a few minutes. Then add the snow peas- fry it again for 3 minutes. Then add the tofu and finally the al dente noodles – cook it all for another few minutes! / Erhitze das Kokosöl in einem Wok. Brate zuerst de Schalotten an, danach die Karotten, Paprika und Jackfrucht dazugeben. Nach ein paar Minuten die Zuckerschoten hinzugeben und weitere 3 Minuten braten. Schließlich Tofu und zum Schluss die fertigen Nudeln unterrühren und weitere 3 Minuten braten!
- Take the wok of the heat and pour the sauce over it./ Nimm die Pfanne von der Hitze runter und kipp die Sauce darüber!
- Portion it into plates and garnish with the chives, lime and peanuts! / Jetzt kann alles in Schüssel serviert sowie mit Schnittlauch, Limette und Erdnüssen garniert werden!
